Affinato (aged at least 12 years)
The Traditional Balsamic Vinegar of Modena, unlike the balsamic vinegars commonly found on the market, is a D.O.P. obtained exclusively with local grape must, cooked and left to mature in fine wood barrels for a minimum of 12 years. By law, it can be found only in the exclusive bottle and box you see pictured on the right.
There are two types:
Aged at least 12 years “Affinato”
Aged at least 25 years “Extravecchio”

Traditional balsamic vinegar is completely different than what you find in the stores in the U.S. It is deliciously complex due to its unique production method, and should be used sparingly – a little goes a long way. A traditional bottle can last you years if stored properly.
